Summer is around the corner, meaning that the barbecue is about to return. It also means that you have to clean your fridge for all your leftover meat, which you will have to store.
There will be no other summer barbecue classic that you set aside your greens more than pulled pork. Delicious and savory sandwiches are amazing, but what do you do with leftovers after the sun comes out and the barbecue cools down?
Luckily, we have an answer for you. We made our way through the internet, searching for some recipes with pulled pork that would help you clean the fridge and get your leftover doctor like never before. Grab your tongs and let’s cook.
Pulled Pork Shepherd’s Pie
In our list of dishes with pulled pork, it takes the first two old classics and makes them new again. While it takes some time to prepare, this delicious dish will be worth the wait to come to the dining table.
- 5-6 cups pulled pork
- 2 cups bbq sauce
- 1 cup frozen peas
- 1 cup frozen corn
- 3-4 pounds of potatoes
- 2 tablespoons butter
- 1/4 cup milk
- 1 1/2 cups grated cheddar cheese
- Preheat the oven to 350F.
- Peel the potatoes and, if they are large, cut them in half. Put in a pot and fill with water. Boil until tender. water down. Mix butter and milk in potatoes. Mash until the potatoes are creamy.
- Toss pulled pork with BBQ sauce until evenly coated. Spread on the bottom of a 13 × 9 baking dish (lasagna pan).
- Sprinkle frozen peas and corn on top of the pork.
- Spread mashed potatoes on top of the frozen vegetables.
- Top with grated cheese.
- Bake in the oven for forty-five to sixty minutes. The cheese should begin to brown and some bbq sauce should be bubbling on the sides.
BBQ Poked Pork and Rice Skillet Supper
This next addition to our list of recipes with pulled pork is for those who need to get rid of the pig without eating alike. This lean skeleton recipe is an exquisite quick dinner that will satisfy like a good sandwich, no need for bread.
- 1 teaspoon oil
- 3/4 cup black pepper, chopped
- 1/2 cup onion, chopped
- 2 teaspoons garlic powder
- 1 cup rice
- 2 cups of water
- 1 14.5 oz can sort tomatoes, untrained
- 1 black bean, can be dried
- 1 cup Corn kernels
- 1 1/2 cups pulled pork
- 3/4 cup BBQ Sauce
- 1/2 cup chopped cheddar cheese
- Green Onion or Sitaphal for Garnish
- Heat oil in a large bowl. Add onion, chili, and garlic and cook until soft. Season with salt and pepper
- Add the pulled pork and rice to the pan, until the rice is lightly toasted.
- Stir in water, bring to a boil and then simmer for about twenty minutes. If you want to avoid drying out, then add some more water.
- Once rice stir in al dente, black beans, corn, tomatoes and BBQ sauce.
- Top with cheese and cook until the cheese begins to melt.
- If you want (and you have an oven-safe pan), boil until the cheese is fluffy and brown.
- Garnish as desired.
Pulled Pork Mac and Cheese
A guaranteed show stopper for children, this last addition to our list of dishes with pulled pork is a quick and hearty dish that will be liked by both children and adults.
- 3 cups macaroni with no elbow
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 cups milk
- Velveeta Cheese (Cubed) 8 oz
- 1 1/3 cup cheese
- 2/3 cup sour cream
- 2 cups chopped tart cheese
- 4 cups pulled pork
- 1 1/4 cup barbecue sauce
- Preheat the oven to 350 degrees.
- Cook the macaroni according to the package directions. Dry the macaroni and pour it into a 9 × 13 baking pan (or slightly larger).
- In a medium saucepan, melt 4 tablespoons butter. Add in flour, salt and sugar, then shake until smooth.
- Stirring continuously, mix slowly in milk. bring to a boil; Cook and stir for two minutes or until the mixture thickens. Reduce the heat to low.
- Stir in velveeta cheese until melted.
- Stir in the cheese, sour cream, and 1 cup of cheddar cheese until melted.
- Add the cheese mixture over the macaroni.
- In a medium bowl, combine pulled pork and barbecue sauce together. Spoon the pulled pork evenly over the macaroni and cheese.
- Sprinkle with leftover cheddar cheese.
- Bake, cover, for twenty minutes. Then expose for an additional twenty minutes and bake until it becomes hot.
- Sprinkle on top with Fried Onion or Fresh Snip Parsley, if desired.
